• 1 packet Halloumi cheese, cut into large chunks

  • 1 small aubergine, cut into large chunks

  • 1 large courgette, cut into large chunks

  • 1 red pepper, cut into large chunkS

  • 2 garlic cloves, crushed

  • 1tbsp olive oil

  • 2tsp CREOLE

  • Juice of 1 lemon


Serves 2 - Prep 60 min - Cook 10 min

1. Place the courgette, aubergine, pepper and halloumi into a bowl. Then add the crushed garlic, CREOLE SPICE, lemon juice and olive oil, mix well and leave to marinate for at least an hour.

2. Thread the chunks of halloumi, aubergine, courgette and pepper onto wooden skewers then cook, ideally on the barbecue. These can also be cooked under a hot grill, for about 5 minutes either side.
